Campfire Dutch Oven Catfish

After checking bank poles or limb lines, nothing beats a Dutch oven full of catfish and vegetables over coals. This one-pot meal scales for camp or backyard fire pits.

Ingredients

  • 2 lbs catfish fillets or nuggets
  • 4 small potatoes, 2 ears corn (cut)
  • 1 onion, 1 bell pepper
  • 4 tbsp butter, 1 tbsp Cajun seasoning
  • Salt, pepper, and parsley

Cook

  • Layer potatoes and corn in a greased Dutch oven.
  • Top with catfish and vegetables; dot with butter and seasoning.
  • Cover; cook over coals 25–35 minutes until fish flakes.
