Beer-Battered Perch Strips
Yellow perch fillets love a cold beer batter — it puffs crisp in hot oil and stays light enough to let the sweet perch flavor come through.
Batter
- 1 cup flour + 1 tsp baking powder + pinch salt
- 1 cup cold beer (lager or pilsner)
- Mix until just combined; lumps are fine
Fry
