Venison Chili for Cold Weather

Ground venison makes lean, flavorful chili that does not need much doctoring. Brown the meat hard, build flavor with aromatics, and simmer low until the kitchen smells like game day.

Ingredients

  • 1 1/2 lbs ground venison
  • 1 onion, 2 cloves garlic, 1 bell pepper (diced)
  • 2 tbsp chili powder, 1 tsp cumin, 1/2 tsp smoked paprika
  • 1 can diced tomatoes, 1 can kidney beans (drained)
  • 2 cups beef or venison broth
  • Salt, pepper, and hot sauce to taste

Method

  • Brown venison in a Dutch oven; set aside.
  • Sweat onion and pepper; add garlic and spices 1 minute.
  • Return meat, add tomatoes, beans, and broth.
  • Simmer 45–60 minutes; adjust seasoning.
